Why?
I don't really understand, but I'm just happy we are all together now as a family. Things are beginning to settle down a bit, whereas we are getting into a routine.
Soon we will have The Princess' crib, then her room will be done. The last room that needs setting up of any sort. Then I can finish the last of the unpacking, which is really just organizing stuff, decided what goes where. Once everything has a place to go it can go there.
It's a change for all of us. From sharing a room with all three kids to having our own room and the kids having their own rooms, it's...well...
The flight down here was a little harder then it should have. Not because we had kids, they were amazing! The actual flight was rough. The first one. Even my Sister in Law was uncomfortable with the flight. Maybe it was because we were starving, because the children seemed unfazed, but it was hard. The second flight was easy peasy.
After the second flight and an hour drive to post, we were finally reunited as a family. The emotions are overwhelming on the feeling that we are all finally together, and not only are we all happier then ever, but are each blooming in our own way.
Little Princess has gone from a lump on a log, to sitting up, rolling over, almost crawling, talking and popping out teeth all in a matter of the three weeks we've been down here.
She did THIS the third day we were down here. No crawling yet, but she's been working on going from crawling position to sitting. She face plants every time but it's the thought that counts.
The boys absolutely love that she is doing more now. They fight over who gets to play with her, and she laughs at them.
Big Brother Love!
They have their own backyard to play in, and it's fenced in so Papa Bear and I don't have to worry about them running off. Once we get more "backyard" toys out there for them, and seats for us adults, it will be our own little at home escape.
There is a park right down the road, which is very easy to get too and right in walking distance.
Thank god for the little red wagon. It makes it easier to cart them to the park, but it definitely is not a one person job. I still ache from pulling them there.
Learning to swing is such a big deal.
The wedding was a huge success, which we never had ANY doubts about. (Seriously, there weren't any)
As one of the MANY wonderful gifts we got, a stand mixer is one of the gifts I got from my parents. As well as a new tattoo (matching to my best friend and Maid of Honor) She has the first half of the quote "Always together, but never apart"
So today, since Papa Bear had a PT test this morning, I figured I'd reward him with Monster Cookie Dough Cupcakes.
I haven't tried them yet, but boy to they look delicious and smell amazing.
For the Cupcakes:
1/4 cup of butter, softened. (Don't be a pansy, use the real shit)
1/2 cup CREAMY peanut butter. (My mother will disown me when she finds out I used Jiff in this recipe, but Choosy Moms choose Jiff.)
1 cup of Sugar
2 whole eggs
2 teaspoons Vanilla Extract
1 1/2 cups Flour
1 1/4 teaspoon Baking Powder
1/3 cup milk ( I ended up using 1/2 - 3/4 cup of milk, didn't harm the turn out, I wanted a creamier mix, it was really doughy.)
1 cup Semi Sweet Chocolate Chips
Frosting:
8 oz Cream Cheese, softened
1/2 cup CREAMY Peanut butter
1-2 cups Powdered Sugar
3 Tbsp. Brown Sugar
3 Tbsp. Flour
1 Tbsp. Vanilla
1 Cup Oats
3/4 bag Mini M&Ms
3/4 Cup Mini or regular Semi sweet chocolate chips.
Preheat oven to 350º.
Use a hand or stand mixer to whisk together all of the cupcake ingredients except for the chocolate chips. Then, stir in the chocolate chips with a spoon or spatula. Fill each cupcake liner about 2/3 full of batter. Bake for 20 minutes or until toothpick inserted comes out clean. Let cool on a wire rack.
Meanwhile, use a stand mixer dough paddle to beat together the cream cheese, butter, and peanut butter until smooth. Mix in the brown sugar, flour, vanilla, and oats. Mix in the powdered sugar 1 cup at a time (1 and 1/2 cups worked out best for me). Finally add the M&Ms and Chocolate chips, mix well. Use a large cookie scoop or ice cream scoop to scoop out the cookie dough onto the completely cooled cupcakes.
Papa Bear says I'm trying to make him fat, but he's not complaining.
